Salt of Palmar is a newly launched hotel brand with 59 rooms located on the east coast of Mauritius close to Belle Mare and right on the beach.
It’s the desire of the hotel management to bring the natural environment and local Mauritian way of life to the forefront, giving every visitor a real sense of what his homeland has to offer.
The farm of Salt of Palmar supplies its own restaurant. There’s a salt room in the spa, and the chance to restore your equilibrium throughout. There are no buffets, fixed TV screens, or single-use plastics. Just everything you need. Or didn’t know you did.
Designer Camille Walala was full of inspiration when she collaborated with local architecture studio JFA on the design of SALT of Palmar. Camille’s bold style meets Mauritius’ soulful style. And with local makers creating the furniture, art, and finer details, the Mauritian influence comes through loud and clear. It makes this boutique hotel completely unique. It’s inspiring. And it’s a very happy place to be.

Each of the rooms is kitted out with only the finest of things. A handmade, king size Carpe Diem bed, developed with physios, so you get the best sleeps. 100% organic cotton bedding. A rain shower. A yoga mat and block. A Roberts radio. And all-natural, locally produced toiletries. Different vibes but the same SALT soul and all for the unwinding and recharging of you.
Garden View: Your view is the filao trees on the beach and the turquoise lagoon beyond. The room is for 2 adults eventually with a baby.
Poolside: You’re just seconds from the pool. It’s a daily blessing. Grab a cooling midday dip or settle in for a serious lounger session. The room is for 2 adults eventually with a baby.
Bang on the beach: You are above the beach’s pristine sand facing east onto the Indian Ocean. Gently lapping waves will lull you to sleep and the sun rises right before you. The room is for 2 adults eventually with a baby.
Pool plus: Big enough on space for additional beds and looking out over the pool, the beach and the sea from your private balcony. The room is for 2 adults eventually with one child or a baby.
Best on the Beach: Incredible ocean views, great space and a double lounger on the outdoor terrace – this room that can accommodate three is a sunrise catcher’s dream. One room of the rooms is for 2 adults eventually with one child or a baby. The Roof Top can only accommodate 2 adults.

Food is the heart and soul of any place. And more than any other part of the SALT of Palmar experience, the restaurant tells you everything about the flavours of Mauritius. Bye-bye buffet. This is fresh, local, and tasty. They know the farmers, fishermen, and growers by name. But, here, the ingredients are the stars. The herb wall and a vegetable cellar show off the bounty. In the kitchen you will see simple, ancient cooking methods.
The wok, the tandoor oven and the charcoal grill are the trinity, and anything and everything will be smoked to release and enhance flavour. It will be marinated for hours and slow-cooked over wood overnight.
For the dishes, Mediterranean, Middle Eastern, and Mauritian flavours all play a part, but it will not be be pinned down by fixed menus. It's a free creation and you are free to join in the kitchen anytime.

The Bakery
Fresh is the word at the bakery. Tempting bread and pastries, always straight from the oven. Local barista, serving freshly home-roasted coffee 24 hours a day, 7 days a week. The SALT bakery is a contemporary café and bakery perfect for gathering, socialising and enjoying a delectable selection of homemade pastries, in a casual and comfortable setting.

The bakers of Salt of Palmar unite the traditional flair of French breadmaking with the incredible flavours of Mauritian fruits. There’s also homemade butter, tropical jams and seasonal marmalades
The SALT Farm
Just five minutes from the hotel, the farm is the own source of freshly-picked ingredients. Salt of Palmar has hydroponic greenhouses full of fruit and vegetables. In one of them, the rustic, vegetarian restaurant connects guests to the agricultural context. And the farm workshops share the secrets of making delicious plant-based dishes. And beautiful green juices. Wellness talks, gardening classes, and yoga tuition go hand-in-hand with it.
Bars
Life doesn’t get more easy-going than this. Relaxing. Meeting people. Sharing stories. Sprawled on a beanbag. With the music, the drinks, and the ocean views, all three of our bars are the place to be.
The Roof Top Bar
The rooftop garden bar overlooking the ocean is the perfect, relaxed aperitivo spot. And from 4 - 5 pm, it’s all about the afternoon tea - a dreamy selection of artisan blends and freshly baked pastries designed to make you happy.
The Beach Bar
Barefoot on the white sands of Palmar Beach, nibble a freshly prepared Mauritian snacks and sip a coast inspired frozen cocktail featuring fresh fruits and the homegrown herbs.
